Sliva of most mammals is free from enzymes and acts as a lubricant because it contains mucus. But in certain mammals like pigs, elephant’s and primates saliva contain an enzyme ptyalin (endoamylase) and this acts on simple links of amylase and amylopetin . As a result a series of maltose, maltriose, and dextrin molecules are formed .in nutshell saliva helps in digestion of starch (polysaccharide) because of enzyme ptyalin . the action of ptyalin generally stops in stomach because gastric acidity .
Saliva is a fluid secreted by salivary glands. This is the first digestive enzyme that acts on food. The saliva contains an enzyme called salivary amylase that breaks down starch which is a complex molecule to give sugar. The food is mixed thoroughly with saliva and moved around the mouth while chewing with the muscular tongue.
